“Just a quick email to let you know that I finally cracked that Bengali Chutney I got off you and it is the BUSINESS!!! Also, my mouth is burning, but it’s a warm, slow burn so not too bad.”
Too bad we are all sold out. Now we are waiting for the next mango crop. Mangoes here ripen later than Northern Territory or Far North Queensland. Recent summer rain and hot weather mean that local Lockyer Valley mangoes are swelling and growing. Should be a good size in a month or so and we’ll be busy cooking and bottling. However it then should be stored in a cool dark place for at least a month for the flavours to develop. We think it is worth waiting for. Do you?
