Late last year, we had a jam session at Sue’s Place in Toowoomba. Sue had a group of Toowoomba friends interested in learning to make jam so it easier for me to go to them.
Sue has a lovely open plan kitchen and a standard size domestic gas stove. I brought along the necessary ingredients, pots and pans and an extra work bench and cook tops. I arrived about 45 minutes before the session to set up and check we had everything we needed.
I had some lovely juicy mulberries to use. Being so juicy and ripe, I knew that they would be low in pectin so first we prepared some home made pectin with apples and lemons.
The ladies all knew Sue but not necessarily each other so we had a lovely time getting to know each other while peeling and juicing. Preparing mulberries is always messy work – all those fiddly stems. But many hands make light work and soon the kitchen was full of a most delightful perfume.
At Sue’s Session we made several different pots of mulberry and apple jam. Each pot had a different texture and spice mix and the ladies had fun choosing which spices they thought would go well together. Such a pleasure to work with clever and creative cooks. The ladies choose a mix of pepper, cardamon, star anise and cinnamon for one pot, lavender and cloves for another.
We finished our jam session with tea and scones and – freshly made mulberry jam. It was delicious. The ladies all enjoyed themselves. Yamini said “very interesting and informative. Having never made jam before I will definitely attempt some at home now.” Other ladies felt that another session might be needed not just to learn more but also to share the jam making. I’ll look forward to seeing these ladies again.

What is included
A 3 hour cooking session and morning tea. You will take home 5 bottles of preserves valued at $35. Extra bottles will be available for sale.
What is supplied
All cooking equipment, tools, ingredients and an apron.
What you need to bring
Please wear sensible clothes, fully closed in shoes and a shoe box or similar carry your bottles home safely.
Our jam sessions are held at the historic Forest Hill School of Arts, Railway St, Forest Hill. Or at your location by arrangement.
Please arrive 5-10 minutes before class starts to settle in before the fun starts.
